Sentio Beechworth Shiraz 2024 Size::1 Bottle Vinified without addition of sulphitesHandpicked fruit was separated into two parcels. One completely de stemmed and partially crushed and fermented in stainless steel. The other parcel was fermented in an open top concrete vessel with lightly treaded, 100% whole clusters. The wines were pressed to a combination of barrique, demi, and puncheons (some new). The wine was blended in October, then bottled in February 2024.
